Tomato and egg Salad
This very easy salad is one I always enjoy eating. Especially in the summer when it is too hot and a salad is exactly what you need. It does not take a lot of time preparing it. The longest time is the waiting until the eggs cooled off. And for the tomatos: just take whatever tomatos you like.
- 350 grams tomatos
- 2 xl eggs, hardboiled
- 3 tb Mayonaise (I use light mayonnaise)
- 1 small onion
- Salt, peper
After the eggs have cooled down mash them and slice the tomatoes in pieces. Cut the onion also in pieces and add the mayonnaise. Salt and peper should be added as much as you like.
I usually take it as a “side-dish” to my sandwich… Very easy, very nom nom …
